Quick Rolls
"Quick" here is of course a relative term, as bread and rolls need their time. So with this recipe "only" taking about 3 hours from start to finish is pretty quick in this context. Most recipes I have for rolls take anywhere between 12 and 36 hours including fermentation/resting periods.

Sesame Rolls
I love German bread rolls, so I made a batch of sesame rolls with wheat, rye and spelt flour. Rolls and German bread is what I'm missing the most since I move to the US almost 10 years ago. Since I started baking my own bread that part is solved, however making bread rolls is a lot more difficult to time right, as most recipes require quite long fermentation times and - other then bread - rolls are the best just a few minutes after they come out of the oven, so timing is a lot more crucial. I finally got it together to make another batch of rolls, and as each time I made some, the taste is awesome.

Wheat Rolls
Ketex wrote a new recipe book, and of course I had to get it. Here is the first recipe I made from it, relatively simple bread rolls, but - man - they were good right out of the oven. Simplicity doesn't mean they are quick to make though. There are two 8+ hours resting periods, so it requires a little bit of planning.

Morning Bread Rolls
Most of the preparation for these bread rolls is done the night before baking allowing to finish it up in the morning and possibly have the rolls for breakfast. Only tasks left to do is shaping, a little resting and baking. This still takes just under two hours though, so it needs to be prepared by someone who doesn't have to eat for two hours after getting up. ;-) Preparation is also relatively easy: combine everything, mix, shape, bake.

Whole Grain Wheat Bread Rolls
I'm a fan of rolls with seeds and grains and also didn't have a lot of time to back so I made these whole grain wheat rolls as they take a lot less preparation time. I picked up a suggestion out of the comments on the original recipe and replaced some of the flour/water with wheat sourdough since I had it around anyways. If you don't want to use sourdough or want to limit the efford even more, just increase flour and water in the main dough by the amounts used in the sourdough and double the amount of yeast.

Wheat Sourdough Bread Rolls
I've made these sourdough bread rolls multiple times already, now I finally got around to add the recipe here. There are two relatively long resting periods (eight or more hours) which makes the planning a little more tricky. For me it turned out to be the easiest to have both proofing periods over night. This recipe results in 18 rolls.

Grains and Seeds Rye Bread Rolls
I tried out a new recipe for multi-seed bread rolls. This type is
actually my favorite kind of roll, so when I found the recipe I had to
make it. The rolls are made with rye sourdough for which rye meal, and
not rye flour is used. The preparation is more involved than usual for
rolls but I guarantee you it's worth it, the taste is absolutely
awesome. These rolls are possibly the best thing I have made so far.
